In the listed barn of the estate, which was probably built as early as the 1870s, single-variety juices, fruit wines, and ciders are carefully handcrafted from old varieties. The apples, pears and quinces are mostly sourced from meadow orchards and private gardens in the region. In contrast to our modern dessert fruit, the old varieties not only have illustrious names such as Eisapfel von Croncel or Altländer Pfannkuchenapfel (which literally translates to pancake apple), they also score points with a broader spectrum of aromas, a wide variety of acid structures and often more pronounced tannins.
