Verjus, from the French vert jus (green juice), is the juice of unripe pressed grapes, sometimes also apples.

Depending on the degree of ripeness of the fruit, the pleasantly sour juice can be enjoyed pure as an aperitif or with selected dishes, used in the kitchen as an alternative to citrus fruits or as a versatile ingredient in cocktails.
